Ramen is somewhat of a cultural obsession here in Japan.
There are an estimated 40,000 ramen shops in the country. To put this in perspective, there are 34,000 McDonalds worldwide.
That puts a ramen shop virtually in every neighborhood of Japan.
Today’s ramen choice comes from the Tsukemen school of Ramen. This is the Dipping style of ramen where you take extremely thick and chewy noodles (cooked, shocked and rung in cold water to tighten the texture of the noodles) and dip them in really thick and fortified broth. This was from a shop called Tomita and “WOW” did it not disappoint. Utterly flavorful, great bite, and being that it was Tsukemen, there was an abundant amount of noodles for the portion.
